I don’t know about you, but breakfast is definitely my favourite meal of the day! With so many delicious options to choose from, I’ve narrowed it down to my top 3 breakfasts which I tend to have on repeat during the week. On weekends I like to enjoy slower more indulgent breakfasts, liked pancake stacks, baked oats or avocado toast or shakshuka.
1. Porridge
One of my favourite breakfasts, especially on a cold winter morning, is a big bowl of warming porridge. It’s cosy, filling and one of the healthiest ways to start your day.
Oats: I tend to use rolled oats or jumbo oats as these are the highest in soluble fibre, compared to instant porridge oats.
Milk: I usually cook my oats in this almond milk, although sometimes I switch it up and use either hazelnut milk or cashew milk.
Protein: My top tip for getting it super thick and creamy is to use a scoop of MyVegan protein powder (you can get 35% off with the code ELIBRECHER at check-out!). I alternate between their chocolate and banana protein depending on my mood that morning!
Toppings: My favourites include chopped banana, nut butter (my favourites are ManiLife peanut butter and Meridian almond butter) and a sprinkle of Eli’s Granola.

2. Smoothie Bowl
Smoothies are a great way to hit your five-a-day, sneak in loads of vitamins and antioxidants, and kickstart your morning with a mega dose of nutrition. I’m definitely more or a smoothie-in-a-bowl type of person and I’m all about the toppings!
Toppings: My favourites are chopped dates, cacao nibs and a drizzle of choc shot.
Blender: I usually use this Nutribullet blender, or if I’m using lots of frozen and tougher ingredients (like nuts/dates) I’ll use my food processor.

3. Eli’s Granola
If I’m looking for a super speedy (yet obviously delicious) breakfast my go-to is a bowl of this Peanut Butter Granola with some dairy-free yoghurt and a handful of fresh berries – quick, nutritious and minimal washing up!
This is also great as a topping over either of the breakfasts above (porridge/smoothie) as it adds a delicious crunch!
