Salmon, Courgette & Carrot Fritters

These salmon, courgette & carrot fritters are light, easy and packed with flavour. They are so simple to whip up yet look impressive – perfect if you’re hosting friends for dinner. These fritters are great to make in big batches, so keep them in the fridge for when you want to grab a speedy lunch on a busy day.

I love serving these salmon, courgette & carrot fritters as a main course alongside some Crispy Lentil Rice and Turmeric Roasted Cauliflower. Alternatively, you could serve the fritters as part of a mezze board as an appetiser alongside some some Hummus, Baba Ganoush or Muhammara (red pepper & walnut dip).

Salmon, Courgette & Carrot Fritters

Makes about 16 fritters

Ingredients:

  • 2 tins (213g each) canned salmon, drained except 2 tbsp liquid⁠
  • 1 medium carrot, roughly chopped⁠
  • 1 medium courgette, roughly chopped⁠
  • 1/2 onion, roughly chopped ⁠
  • 1/4 cup parsley, roughly chopped ⁠
  • 2 tbsp oat flour⁠
  • 2 tbsp lemon juice ⁠
  • 1 egg⁠
  • 1 tsp ground cumin⁠
  • 1 tsp garlic powder⁠
  • 1/4 tsp salt⁠
  • 1/4 tsp black pepper⁠

Method:

  1. Add the carrot, courgette and onion to a food processor and pulse a few times.⁠
  2. Add all remaining ingredients to the pulsed vegetables in the food processor and pulse until combined but not smooth, keeping some ‘bits’ for texture.⁠
  3. Use your hands to shape the mixture into 16 patties and place on 2 plates. Cover with cling film and refrigerate for 30 minutes to firm up while you cook the rice or anything else you are serving.⁠
  4. After 30 minutes, heat 2 tbsp olive oil in a frying pan. Add 3 patties to the pan, use the back of a spatula to flatten each fritter slightly and cook for 4-5 minutes on each side, using two spatulas to carefully flip. Repeat the process until all fritters are cooked.⁠
