Raspberry Snack Bars Vegan Recipe

RASPBERRY PIE SNACK BARS | Vegan + Gluten-Free

These Raspberry Pie Snack Bars are perfect for when that sweet craving hits, whether it’s the afternoon slump or you want a little dessert after dinner. They are so incredibly easy to make and don’t require any fancy equipment or culinary skills – all you do is whisk all the ingredients in one bowl! 

You can use any nut butter in here, although my personal favourite is hazelnut butter. Cashew butter and almond butter work wonderfully well too. Likewise, play around with the berries you use in the filling. Why not experiment with blackberries, blueberries or even stewed apple?

Raspberry Snack Bars Vegan Recipe

RASPBERRY PIE SNACK BARS | Vegan, Gluten-Free, Dairy-Free

Makes about 16 bars

Ingredients:

  • 220g oat flour⁠
  • 1/3 cup nut butter (I used hazelnut butter)⁠
  • 1/4 cup coconut oil, melted⁠
  • 4 tbsp coconut sugar or brown sugar
  • 1/2 tsp vanilla extract ⁠
  • 1/8 tsp sea salt⁠
  • 150g raspberries, fresh or frozen⁠

Method:

  1. Add all ingredients, except raspberries, to a bowl and mix well until fully combined.⁠
  2. Line a small baking tin with baking paper and preheat the oven to 170 C. ⁠
  3. Pour 2/3 of the mixture into the tin and use a spatula to spread it evenly. ⁠
  4. Sprinkle over the raspberries, pressing them into the base slightly. ⁠
  5. Pour over the remaining mixture, making sure to cover all raspberries. ⁠
  6. Bake for 35 mins, then allow to cool for 30 mins. They will be slightly soft and gooey when they cone out.
  7. Once cooled, place in the fridge for at least 2 hours to firm up. Do not skip this step as tempting as they look!⁠
  8. Keep in the fridge for up to 3 days. ⁠ ⁠
