Low Carb Peanut Butter Granola Recipe Vegan Eli Brecher Breakfast

This Low Carb Peanut Butter Granola recipe is high in protein and fibre and so easy to make. It’s packed with nutritious wholesome ingredients like nuts, seeds and quinoa, with a depth of flavour from the peanut butter and cinnamon and a subtle sweetness from the vanilla and a small dash of maple syrup.

I love having this Low Carb Granola for breakfast with berries and almond milk, sprinkling it over yoghurt or using it as a smoothie bowl topping!

LOW CARB PEANUT BUTTER GRANOLA 🥜

Ingredients:

  • 1 cup / 70g puffed quinoa
  • 1 cup / 130g mixed seeds (I used pumpkin, sunflower and linseeds)
  • ½ cup / 50g walnut halves
  • ½ cup / 50g pecans
  • ½ cup / 40g rolled oats
  • ⅓ cup / 40g ground flaxseed
  • ⅓ cup / 30g vanilla protein powder
  • ⅓ cup / 80g peanut butter
  • 4 tbsp sultanas
  • 4 tbsp coconut oil, melted
  • 2 tbsp maple syrup
  • 1 tbsp cinnamon
  • 1 tsp vanilla extract
  • Pinch of sea salt

METHOD:⁠

  1. Preheat the oven to 160 C and line a baking tray with greaseproof paper.⁠
  2. Add all ingredients, except sultanas, to a large bowl and use a fork to mix together very well.⁠
  3. Spread the mixture evenly onto the lined tray and use the back of a wooden spoon to press down tightly.
  4. Bake for 20 minutes, then scatter over the sultanas.
  5. Allow to cool completely, then store in an airtight container up to 3 weeks.⁠
