Baked Lemon Rosemary Chicken
This baked lemon rosemary chicken is another of my favourites. It can be served as a succulent lunch alongside sweet potato or a delicious dinner with roasted vegetables.
Chicken is an excellent source of lean protein, essential for muscle repair and growth, and is packed with vital nutrients like vitamin B6, which supports brain health and metabolism.
The addition of fresh rosemary not only infuses the chicken with a delightful aromatic flavour but also offers antioxidant and anti-inflammatory properties. Rosemary has been shown to enhance digestion and improve circulation, making it a valuable herb in this dish.
Lemon juice adds a refreshing zest and is rich in vitamin C, which supports the immune system and skin health. The acidity of the lemon also helps tenderise the chicken, ensuring it remains juicy and flavourful.
Baking the chicken allows it to retain its moisture without the need for excessive oil, making this a heart-healthy option. Paired with a variety of vegetables, this dish provides a balanced meal that is both delicious and nutritious. Enjoy the vibrant flavours and health benefits of this easy-to-make recipe!
