These peanut butter and banana overnight oats make a dreamy, creamy dessert-for-breakfast, with the sweet flavours of the PB and a thick pudding consistency thanks to the chia seeds and soaked oats.

Peanut butter & banana overnight oats

Ingredients

  • 1/2 cup of oats
  • 1/2 cup of almond milk or Pecan Milk
  • 1/2 mashed ripe banana
  • 1 tbsp peanut butter
  • 1 tbsp chia seeds
  • 1 tbsp vanilla protein powder

Method:

  1. Stir all the ingredients together and leave in the fridge overnight.
  2. In the morning, layer it with toppings of your choice – I use berries, cacao nibs, nuts, pumpkin seeds and a little more PB (because there’s no such thing as too much PB!)
