CRUNCHY HAZELNUT BUTTER CHOCOLATE CEREAL BARS 🌰🍫

These Hazelnut Butter Chocolate Cereal Bars are indulgent, deliciously crunchy and high in protein. They are vegan, gluten-free (provided you use GF cereal) and don’t require any baking (just a fridge!) 

These sweet treats are very versatile – you can use any cereal you have at home and you can replace the hazelnut butter with peanut butter if you prefer!

Hazelnut Butter Cereal Protein Bars Eli Brecher

CRUNCHY HAZELNUT BUTTER CHOCOLATE CEREAL BARS – Vegan, Gluten-Free, No-Bake, High-Protein

Makes about 12 squares

Ingredients:

BASE LAYER:

  • 1/2 cup ground almonds
  • 1/4 cup vanilla protein powder
  • 1/4 cup hazelnut butter
  • 5 tbsp maple syrup
  • 1/4 tsp sea salt
  • Optional: dark chocolate chips

 

CHOCOLATE CEREAL LAYER:

  • 1 cup your favourite cereal (or puffed rice)
  • 150g dark chocolate, melted
  • 4 tbsp hazelnut butter (or peanut)
  • 1 tbsp maple syrup

 

Method:

  1. Line a large tupperware with baking paper.
  2. Add all base ingredients together and mix well until a thick doughy consistency is formed. I find it easiest to use my hands to mix!
  3. Transfer this into the lined container and use the back of a spoon to press it down evenly. Place in the freezer while you make the cereal layer.
  4. Add the melted chocolate, nut butter and maple syrup to a bowl and mix until combined. Then add the cereal and mix until it is fully coated in chocolate.
  5. Pour the chocolate cereal mixture over the base layer. Place in the fridge for 45 minutes to allow the chocolate is set (or freeze for about 15 mins if you’re impatient!).
  6. When set, slice into squares and store in an airtight container in the fridge for 5 days, or freezer for up to 3 months.
