Chocolate Florentines

Chocolate Florentines

These Chocolate Florentines are a decadent yet nutritious treat, perfect for satisfying your sweet tooth. Made with a blend of nuts, dried fruits and dark chocolate, these delightful snacks are rich in antioxidants and healthy fats. Nuts such as almonds and hazelnuts provide protein, vitamin E, and magnesium, all of which support heart health and brain function.

The dried fruits add natural sweetness and are packed with fibre, aiding digestion and helping to maintain stable blood sugar levels. They also offer essential vitamins and minerals, like potassium and iron, which are crucial for energy production and immune support.

Dark chocolate not only enhances the flavour but also delivers powerful antioxidants, which can improve blood flow and reduce inflammation, as well as containing gut-friendly polyphenols. Choosing dark chocolate with a high cocoa content maximises these health benefits while providing a rich, satisfying taste.

Combining these nutrient-dense ingredients makes these easy Chocolate Florentines a balanced indulgence that can be enjoyed as a treat or a thoughtful gift.

Chocolate Florentines Recipe

Ingredients:

  • 1/2 cup flaked almonds
  • 1/2 cup pumpkin seeds
  • 1/2 cup sultanas
  • 1/4 cup honey or maple syrup
  • 1 egg
  • 1 tsp vanilla extract
  • 1/4 tsp sea salt
  • 140g dark chocolate

Method:

  1. Preheat the oven to 160°C and line a baking tray with grease proof paper.
  2. In a large mixing bowl, add all ingredients except the chocolate and mix well until combined.

  3. Use a tablespoon to take a spoonful of the mixture and place on the lined baking tray and flatten slightly using the back of the spoon. Repeat with the rest of the mixture.

  4. Bake for 12 minutes, until golden around the edges. Allow to cool completely on the baking sheet for at least 20 minutes – they will be very soft when hot and will firm up as they cool.
  5. In the meantime, chop dark chocolate into small pieces, place in a shallow bowl, and melt in 30-second intervals in the microwave or over the stove.
  6. Dip the back of the Florentine’s in melted dark chocolate and place on a flat surface lined with parchment paper with the chocolate side up. Add an extra sprinkle of sea salt, if desired.

  7. Chill the Florentines in the fridge for 5 minutes for the chocolate to firm up. Store in an airtight container in the fridge for up to 2 weeks, or freeze for up to 3 months.
