Butterbean Tomato Pasta

Butterbean Tomato Pasta

Looking for a hearty, warming gut-loving dinner? This Butterbean Tomato Pasta has been my go-to comfort food lately, and it’s packed with gut-loving ingredients. It’s nourishing, delicious, and perfect for when you need a filling yet wholesome meal.

I’ve added a twist to this classic by using bone broth which not only brings extra protein and depth of flavour to the dish but also supports gut health with its glutamine and collagen content.

Butterbean Tomato Pasta Recipe

Serves 4

Ingredients

  • 600 ml tomato passata
  • 320g bone broth (make your own using my bone broth recipe)
  • 1 onion, finely chopped
  • 2 tbsp olive oil
  • 280g pasta (I used chickpea pasta for added fibre and protein, but feel free to use any type)
  • 1 tin butterbeans, drained and rinsed
  • 4 tbsp fresh parsley, finely chopped

Method

  1. In a small pan, pour the bone broth and bring it to a simmer. Once it’s bubbling gently, stir in the tomato passata and let it simmer for a few more minutes, allowing the flavours to combine.
  2. Heat the olive oil in a large pan over a low heat. Add the onion and sauté for around 5 minutes, or until it becomes soft and translucent. This creates a lovely base for the rest of the dish.
  3. Add the dry pasta to the pan, stirring well to coat it in the oil and onions. Pour in about ½ cup of the tomato-bone broth sauce and keep stirring. The pasta will soak up the liquid, and you want to keep stirring until it’s fully absorbed.
  4. Gradually add the tomato-bone broth sauce, ½ cup at a time, and continue stirring. Let each addition soak in before adding the next. This method helps the pasta cook perfectly, absorbing all that rich flavour.
  5. When the pasta is nearly cooked (about 2 minutes before it reaches your desired consistency), stir in the butterbeans. Let them heat through, adding extra protein and fibre to the dish.
  6. Season generously with black pepper and garnish with fresh parsley for a burst of colour and freshness. Serve hot and enjoy!
