These Blondie Brownie Bites are made up of a rich chocolatey brownie base, topped with a peanut butter cookie dough blondie, and studded with dark chocolate chips all the way through both layers.

Like all my recipes, these Blondie Brownie Bites are gluten-free, dairy-free and refined sugar-free, made from wholesome ingredients. They are completely vegan and completely delicious too!

Blondie Brownie Bites (Vegan, Gluten-Free, Dairy-Free)⁠

Ingredients:

For the brownie layer:

  • 1 cup / 120g gluten free oat flour
  • 2/3 cup / 80g ground almonds 
  • 2/3 cup / 80g cacao powder 
  • 1 cup / 250ml almond milk
  • 1/4 cup / 65g melted coconut oil
  • ½ cup 120ml maple syrup
  • 1/3 cup / 50g chocolate chips/dark chocolate 
  • 1 tsp vanilla extract
  • Pinch of sea salt

For the blondie layer:

  • 1 cup / 120g gluten free oat flour
  • 2/3 cup / 80g ground almonds
  • 1/3 cup / 50g chocolate chips/dark chocolate
  • 1/3 cup / 90g smooth peanut butter
  • 1/4 cup / 60ml maple syrup
  • 1 tsp vanilla extract
  • Pinch of sea salt

Method:

  1. Preheat the oven to 160C and line a square brownie tin with baking paper.
  2. For the brownie layer, combine the oat flour, ground almonds, cacao, salt and sweetener in a bowl.
  3. Add the remaining wet brownie ingredients and mix thoroughly.
  4. Transfer the mixture into the lined tin and bake for 20 minutes.
  5. Leave the brownies to cool in the tin before making the blondie layer.
  6. To make the blondie layer, mix together all the ingredients until combined.
  7. Press the blondie layer on top of the brownie layer, using the back of a wooden spoon to press down evenly.
  8. Place in the fridge for 1 hour to set before slicing into squares. Enjoy! Store on the fridge for up to 5 days or freeze for up to 1 month.⁠
