Almond Butter & Jam Date Bark

My AB&J twist on the viral date bark recipe combines sweet medjool dates with crunchy almond butter, jammy stewed berries (you can cheat with the microwave!) and silky smooth dark chocolate.

All you need is 4 ingredients! It seriously tastes like a Snickers bar and makes for the perfect sweet treat to stash in your freezer. It’s vegan, gluten-free, and so addictive. These little bites of heaven are SO easy to make, so get in the kitchen and thank me later.

Here’s why it’s not just tasty but also good for you:

  • Although it’s sweet, the fibre in it keeps your blood sugar levels stable, providing long-lasting energy without the crash.
  • It’s low in fat but high in essential nutrients like potassium, copper, magnesium, and vitamins B6 and K.

When it comes to storing it: Pop it in an airtight container in the fridge, and it’ll stay fresh for about a week! Or freeze it for up to three months. Just remember, if it’s been in the freezer, give it a few minutes to soften up before you dig in.

Almond Butter & Jam Date Bark

Makes about 10 squares


  • 8 medjool dates
  • 3 tbsp crunchy almond butter
  • 1/2 cup frozen berries, microwaved for 2 mins
  • 50g dark chocolate, melted


  1. Line a loaf tin or small baking pan with parchment paper. Split dates open lengthways but don’t break them in half. Remove the stone and press each date down onto the sheet, keeping them as close together as possible.
  2. Fill each date with almond butter (only using half), then pour over the microwaved berries and use a spoon to spread them out evenly over the dates. Place in the freezer for 10 mins.
  3. Pour over the remaining almond butter and use a spoon to spread it over the berries. Then pour over the melted chocolate, spread it out so it’s covered, and place in the freezer for 10 mins to set before cutting into squares.
  4. Serve and enjoy. Keep in the fridge for up to 3 days.
